Stir-Fry Veggies and Cashew Nuts

This dish can be made with any veggies you have to hand but this was what I had today when making it


Ingredients

1 medium carrot
1 medium onion
1 large hand full cauliflower florets
100g or so shredded cabbage
2 cloves garlic
60g / 2oz cashews
1-2 table spoons of Dark soy sauce
table spoon oil of your preference



Method

chop and slice all the veg into stir-fry size, mince the garlic.

heat your wok, add the oil and when starting to just smoke add onion and garlic give a little stir, add the other veggies stir for a few minutes until starting to soften add the cashews and half the soy sauce, mix everything together add a table spoon of water. put a lid on the wok and turn down the heat and cook until all the veggies are cooked and the cashews have plumped up a little.

season to taste with black pepper and the remaining soy sauce.

Then just enjoy
